Afternoon results.

I've been cooking all afternoon, taking advantage of having two days off in a row.


First I made the vodka sauce from VCON



Shown here on a piece of bread, since I made it to freeze for another time. The sauce has almonds in it to add creaminess, but after I blended my almonds in, I felt the sauce was too pasty and I added about a quarter cup of soymilk to thin it out a bit. You can still see how thick it is here. Still pretty yummy though.

Then I made Cauliflower Leek Soup, based on this recipe.



Mine has roasted garlic added and I served it with multigrain croutons.

Braised fennel with lemon, coriander and bay leaf.



Roasted brussel sprouts.



I'm hoping to make chickpea noodle soup tomorrow.
