Breakfast sandwiches

When I was a little girl, my family always served a fairly European-style breakfast on school days, reserving the big plates of pancakes and eggs for the weekends.

We'd have a variety of cold cuts, leftovers from the night before, breads, müesli and fruits. I loved nothing more than making little breakfast sandwiches out of whatever was on the table.



I bought some oyster mushrooms the other day, not knowing what I was going to be doing with them. oysters have a subtle flavour, so I didn't want whatever I was making with them to overpower that.

I sauteed some chopped mushrooms with a bit of onion and basil in earth balance. added salt and pepper. On a toasted english muffin, I added some hickory smoked Tofurky slices, tomato and the mushroom mixture. They were delicious.
